“Third Pillar” Premium Australian Olive Oil

At Third Pillar we harvest and process each variety separately giving us the option of blending to produce a range of styles, or to produce a single variety oil.

The combination of our varieties, soil types, climate and grove management generally produce medium to intense fruity flavour styles which display the true and varied herbacious characters so appreciated in quality olive oils.

Here are some comments from Richard Gawel, Chairman of the Australian Olive Association organoleptic panel on the oils produced from our individual varieties:

Frantoio: A moderate intensity of cut grass and a touch of mint. Finishes with an intense bitterness and late pepper-like pungency.

Minerva: Unusual malty, Ovaltine-like aroma. Finishes with a mild pepper.

Leccino: Fresh lively lifted nose of green Granny Smith apples. A balanced bitterness and a late, lively pungency match persistent fruitiness.

Leccino: Nose of green tomato and tomato leaf. Good strength of fruit, moderate bitterness and strong pungency.
